Skool me on Country Style Pork ribs BBQ

Since I have you other CG addicts attention, can someone help me with country style pork ribs. Just getting my first offset smoker going. I have smoked/BBQed baby back, spare ribs and whole chicken on a vertical smoker before, but this is my first go-round with an offset.

Starting with mesquite lump charcoal, and either oak or grape vine wood.

But I could use some pointers on country style pork ribs, and even boston butt if you care to share.

Smoke at 225 degrees for 4-6 hours, mop with a mop sauce (I make my own based on apple cider vinegar) every 30 minutes. Glaze with BBQ sauce of your choice 30 minutes before removing from smoker.

At least, that's how I do it, and they always turn out quite lovely!

NC-style BBQ dip makes the pork butt/roast for me, but then, I grew up on it, and am partial to it.
